put your text on a straight path and convert to outlines - use the free distort tool to taper the text or use a tapered rectangle (what are they called? Truncated triangle?) as a shape to define a...

P.S. You don't need to make the text outlines - that doesn't mean that it is editable though because it is automatically converted to outlines when you drop it on the brushes pallet
